I guess it's only fair for me to tell you a little about myself, huh? Well, as you now, my name is Torri. I live in Georgia (the state, not the country). :) I am Records Coordinator in Testing Services at a local college. I graduated from the University of West Georgia with a Bachelor's degree in English. I am now a graduate from Georgia Southern University with a Master's in Higher Education Administration (M.Ed.) My passion is writing, and I am working on a ghost story/novel that I will have published soon. My other past times are, traveling, culture/language (I'm studying Spanish), horror/mystery films, being with my family, cooking, and spending time with my mischievous shih-poo pup, Coco! :)

We have both put a lot into our home (money & time)--decorating and adding new things. One of the most important things to me is that after a long day of work, I have a nice, clean, cozy place to come home to.

I am a proud mother (along with my sister) of this 10 month old shihpoo (shihtzu/poodle), Coco, who is mischievous in every way! Coco is very feisty and has a lot of spunk that gets him into loads of trouble. :) Although he's so hyper and out of control, I could not imagine life without him, so this space is dedicated to him. CHRISTMAS '10

Christmas was a great celebration. What was so great about it was that I didn't have to do anything. :) My mother hosted the entire thing! It was good to get out of the house and to be at someone else's house for a change. I got all the gifts that I wanted, and out of them all, my electric kettle and shortbread cookies imported from Scotland were my favorites! :) ..Oh, and I do love the Givenchy fragrance I received as well! :)

I got a bit lazy this Thanksgiving, as I was a little pressed for time, having to work long hours. I really wasn't prepared to have a large dinner, just something relaxing that didn't require me to have to do a lot of work. I wanted to eat, relax, and watch movies on my short Thanksgiving break. However, I got all the basics done with not nearly the amount of clean up--clearing the table--that I had to do the previous years. We all just fixed our plates from the stove and enjoyed! It was actually quite nice and quaint. :)

Memorial Day is a day to remember those who have given their lives for our country. This Memorial Day, I had the chance to have a small get together and celebrate the lives of our falling heroes. What I like most about Memorial Day, a part from remembering those who we have lost, is that it is the first BBQ of the year! We did a little BBQing, and boy was it great! :P

When planning a get together who says you have to spend loads? Not true at all! You can create an elegant, delightful table with little money. I got a lot of good bargains on autumn what-nots at Big Lots, Dollar Tree and Wal*Mart - everything was under $25! The other decorations were things that I used from around the house. Adding loads of fall floral to your own everyday decor makes for an excellent autumn feel! Don't think you have to spend a lot to get a fantastic look for any occasion. Spend wisely and be creative!

Let the Right One In

There is a reason why I have listed this film as # 1. It's my all time FAVORITE movie! "Let the Right One In" is a remarkable film about the life of a vampire living in modern day Sweden. The movie stays true to the vampire genre by incorporating all we know and have learned about the creatures. I have recently seen the film "Twilight," which, in my opinion, insults vampires and the genre by entwining both with a boring plot of romance that goes nowhere. I can seriously say that there were times during "Twilight" that I just wanted to drop-kick my TV and burn the DVD. If you are looking for a great movie about vampires that will keep you intrigued, excited, guessing, and entertained, then I suggest that you watch "Let the Right One In;" you will not be disappointed at all.

Yesterday, I was browsing online to see if I could find some things for my upcoming tea party. I came across this fabulous site that sells authentic British products. I was particularly looking for Devon, as I have never tasted 100% real Devon cream. You can find anything from tea, teapots, teacups, scone mix, English cookies, and Devon cream on this site! I was very excited. I purchased an 6 oz jar of authentic English Devon cream for a very reasonable price! What I like about the English Tea Store is that you don't have to sit there crossing your fingers, hoping that what you've order is correct. There's an online agent that you can talk with instantly for questions that you may have with their products. Definitely a great site for those who love all things tea and British. :)

I got this cute little popcorn box at Target for only $1.00. I bought a couple of them, and in doing so, I got inspired to host a popcorn/movie party for me and my friends. :) These little boxes were the highlight of my party....

..... but the food that I served - hotwings, pizza, veggie dip and veggies -were the star! The movie I chose was something I had seen already, but one that my friends hadn't. It was "Predators!" It kept our attention and kept us on the edge of our seats! Point of this post is that anything as silly a $1.00 popcorn box can lead to an AWESOME gathering for you and your best buddies! :)

Death Note

I haven't been able to find any good movies lately, so I started to think outside the box a little bit and give anime a try. I was recommended this movie by a friend from Korea who said the series was great. I watched all 37 episodes of this one and I must say it was one of the best films that I have seen in a long time. The story is great, the plot is loaded with action, and there are loads of twists and turns! Be sure to watch the 100% Japanese version (with subtitles) because it's more authentic!

Despite the fact that Light (the main character) is actually killing people, I found him to be my favorite character of the series! I really did not see anything wrong with what he was doing in the beginning, but towards the end, he kind of flipped out. :) The ending was great, but a bit sad. I found myself feeling pity on a lot of this characters, too. My favorites were - of course, Light, L, and Near... Ryuk was great, too!

So, if you've hit a brick wall in finding a decent movie and don't know what to do, please give this movie a try! You will be very impressed. This has got to be one of the BEST films I have seen. It has opened my mind up to see that anime films are not just cartoons, but have brilliantly written stories, full of suspense and mystery! I've added a few more to my queue on Netflix!

These pictures below show that I've extended my flower garden and planted a variety of beautiful flowers since last spring. As you can see from this picture compared to last year's pictures, my lavender bushes have DOUBLED in size, and boy do they smell lovely! I know my new flowers don't look much of anything now (little and tiny), but I'll be posting some updated pictures of them as they grow. :) I feel as though I'm not long away from having that so desired "English garden" that I dream of! :0)

This year I followed my old tradition of hosting a fall high tea party by candlelight. My guests had a great time with the games played and the dinner was great. I tried a few new recipes.

Hello! It's been quite a long time since I've written in this journal. I've been extremely busy these past couple of weeks and haven't had time for anything else! I can say that I have completed my master's program in December, which is something I consider to be the BEST Christmas gift of my life! Hahaha No more SCHOOL! YAY! :) I'm so proud of myself!

I had a nice Christmas dinner..... Well, to be honest, Christmas is just Christmas, one of my least favorite holidays of the year. I don't know why, but I think it's just that people have so many high expectations for that holiday that tend to stress them out and ultimately blows up in the end. That's kind of how mine was. HAHA! Trying to find the "perfect" gift can be horrible and in the end you're so frustrated that you don't even care anymore. It's horrible. I hate that Christmas has become to "commercial" when the holiday's main theme has nothing whatsoever to do with "buying the perfect gift." UHHH! Though I know the true meaning of Christmas (Jesus's birth), I do find myself getting caught up in the world's idea of it. So, next Christmas, I will not stress over gifts, decorations, etc... But, as I have said, my Christmas dinner was YUMMY! We decided to do a seafood menu this year and boy was it delightful!

Well, it's another new year. These years are passing by so quickly! I didn't set a new year resolution this year because I tend to never stick to them anyway. Hahaha! However, this year, I hope my career path opens up more with a new, high-paying job, more money and opportunities. :)

Harry Potter

NEW!!OK, so with all the hype surrounding Harry Potter and the fame of the series and it's writer, I decide that I needed to experience it all for myself. I purchased the Harry Potter box set from Amazon for $50 and began reading endlessly (7 months). I can honestly say that I really enjoyed the books, not all were my favorite, though, but the imagination of JK Rowling is so HUGE, it's almost SCARY! She has created a whole world of magic and overwhelming weirdness that I felt trapped in myself! I mean, who would even think of something as far fetched as moving pictures, flying hippogriffs, horcruxes, hallows, dementors, merpeople and so, so much more!

The first two books of the series, I would say, were for children, but as Harry progresses in age, the books become more mature and more, in my opinion, "serious," which I think is a great move on the writer's end because it allows the audience to grow with Harry. I would say that out of all 7 books, "The Prisoner of Azakaban," "The Half-Blood Prince," and "The Deathly Hallows," were my favorite three. Granted, the others were good, but I found that "The Goblet of Fire" and "The Order of the Phoenix" had a lot of unnecessary rambling-ons that could have been summed up in half the number of pages that Rowling filled up. I found myself losing my concentration and bored while reading those two. Don't get me wrong, the two books are significant in the series, but they were by far too long and uninteresting at points.

At the end of the day, however, I can honestly say that I am proud of myself for having read and purchased all seven of what the world considers to be one of the most intriguing modern series! I have enjoyed them all, and I will definitely reread some of the books in the future. I will save my collection for my children, in hope that they find the Magical World of Harry Potter as interestingly fascinating as I have! :) I won't give away the "message" of the series, but I think it was one that any child or adult should take to heart!

Paranormal State

I don't believe there's any other ghost show on television that scares me as much as this one. Ryan Buell (who happens to be a very handsome young man, LoL) and his team are amazing. They go to great lengths to help those who have been tormented by ghosts. The thing that I like about this show is that the team offers spiritual help and guidance, which is what sets them apart from any other ghost hunting team on T.V. When Night Falls

A nurse killer is on the loose in this suspenseful thriller set in New Zealand. This movie is great, it is full of twists and turns! I found myself on the edge of my seat throughout the film. The ending is very good because it does something totally different. At first I was expecting a typical ending, but it was very different than what I expected. I really liked this film a lot and I recommend that you watch it.

So I was shopping the other day in Wal*Mart with my sister when I came across this GREAT wok for $30. I've always wanted to know how to make great stir-fry, and I get sick of always going to the Chinese restaurant getting food that is not healthy and that's greasy and makes me break out! BLAHH! I've always known that I can make the same dishes at home WAY better and healthier, which is why I purchased this Wok! It's great! It has inspired me to do loads of different types of Asian cuisines! If you love Chinese food as much as me, but want to cut back on the calories, grease, and money, please go an purchase a wok today at your local Wal*Mart or Target! :) You'll feel like a true Iron Chef! :)

I can finally see the light at the end of the tunnel, though. I will be graduating in mid-December! YAY! I am so happy that I have actually finished up my graduate degree! I don't really have a graduation celebration planned. However, I will be going out to eat somewhere I am sure. :)

The autumn this year has been extremely nice, but cold. We have had a few pretty days, though. Like Thanksgiving was very nice! I do think we were blessed with lovely weather on that day. Fall is one of my favorite seasons of all!

Well, that pretty much all for now. I'll try to write here more often if time permits.

What a great way to celebrate Labor Day with a plate full of comfort food - green beans, roasted chicken with vegetbles, creamed potatoes, cornbread muffins, and yorkshire pudding with gravy. :)

Yorkshire Pudding

Ingredients:

3/4 cup all-purpose flour
1/2 teaspoon salt
3 eggs
3/4 cup milk
1/2 cup pan drippings from roast prime rib or beef (note: I don't eat beef so I used vegatable oil)
Directions:

Preheat the oven to 450 degrees F

Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings/vegeable oil into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in the oven and cook until puffed and dry. 15 to 20 minutes.

As I have stated, I love the paranormal. Throughout my life, I have been intrigued by the paranormal. Growing up down south in a family that were owners of over 200 acres of land in which the Civil War, slavery, lynchings, and other horrific events occured on, gave me the opportunity to experience my own encounters with the invisible. Twice in my life, I have been in the presence of the ghosts, once when I was 5 years old, and another time when I was 22. I'll tell my stories later.

Anything paranormal is interesting to me, whether it's watching a scary movie or T.V show or reading a ghost story. I have posted one of my favorite ghost stories. If you want to cuddle up with a warm, scary book, I advise you to go check this one out ASAP!

I received an email from a friend who wanted to know some other titles that I enjoy. I have posted 3 of my favorite ghost stories. I've been reading books by Mary Downing Hahn since I was like 10 years old. These books are juvenile (they are very realistic though), and for that reason, they are very easy to read. I really liked The Old Willis Place a lot, but I would have to say that Wait till Helen Comes is by far my favorite. Deep and Dark and Dangerous is a sad ghost story, and after reading it, I had tears streaming down my cheeks.

Sims 2

Okay, so I have already mentioned in some early posts that I am a HUGE computer game NERD! But it wasn't until my friend and my sister turned me on to the Sims that I found out that I am ADDICTED to computer games. The Sims 2, that's right, Sims 2 (not Sims 3) has got to be the most exciting game that I have ever played. I cannot believe how much time I am spending playing it! The little 'sims' are so important to me, and there isn't a day that goes by that I won't get on and "check on" them. hahahaa :) They have hugely become a part of my everyday routine/life. If you're thinking about getting the Sims game, I highly reccommend that you get Sims 2; it is much better than the Sims 3, which I found extremely difficult to figure out. There are loads of expansion packs that come with both games. So far, I've only got one - Sims 2 Seasons. It has yet to arrive from Amazon, but I tell you, I am counting the days until it's arrival! I imagine I'll spend more sleepless nights in front of my laptop, eyes red from fatigue, playing it! :) I am so excited about this game!

Hello everyone!

I hope all is well. I'm doing extremely great! This has been a great summer so far. Though I took courses, they went quickly and they were not at all stressful. Actually today completes my semester (YAY!)

My sister and I decided to travel to Colorado for our holiday, as it's supposed to be one of the most gorgeous of all the 50 states. And to be honest, I found it breathtakingly beautiful. I much admired the naturalistic/rustic look of the place, as the Great Rocky Mountains run through the majority of it, and there are winding rivers and flowers full of fields at every turn! It's just amazing! So far, Colorado and Arizona are the loveliest states I have visited. I like both for their uniqueness and charm.

Going to Colorado was very relaxing, as I really needed some relaxation this summer. :) I feel good and rested after seeing some amazing sights. I can't wait for my next holiday adventure, which will no doubt be next Spring! :)

I do apologize for not updating my blog frequently, but since I don't have a lot to do for the next month, I'll definitely be updating more often, so stay tuned!

Tracy's Guilt-free Lasagna

Ingredients:

1 pound ground turkey
Cooking spray 1 1/2 cups water
2 jars of Mario Batali tomato marinara
3 cups (12 ounces) shredded mozzarella cheese, divided
2 cups 1% low-fat cottage cheese
1/2 cup (2 ounces) grated fresh Parmesan cheese
9 uncooked lasagna noodles (Whole Wheat)
1 box of Birds Eye Spinach

Directions:

Preheat oven to 350°.

Cook the turkey in a large saucepan coated with cooking spray over medium heat until browned, stirring to crumble(drain of there is fat remaining)

Boil lasagna noodles until they are al dente. Set aside.

Add pasta sauce, spinach, and parmasean cheese to turkey and bring to a boil. Add salt and black pepper to taste. Cover, reduce heat, and simmer 10 minutes. Remove from heat.

Combine 2 cups mozzarella, cottage cheese, and next 4 ingredients in a bowl.

Spread 1 cup turkey mixture in bottom of a 13 x 9-inch baking dish. Arrange 3 noodles over turkey mixture; top with 1 1/2 cups turkey mixture. Spread half of cheese mixture over turkey mixture. Repeat layers, ending with the remaining turkey mixture.

Bake at 350° for 1 hour. Sprinkle with 1 cup mozzarella cheese, and bake, uncovered, for 10 minutes. Let lasagna stand 10 minutes before serving.

Torri's Yummy and Health Spaghetti

Ingredients:

1lb of ground turkey
1 large red onion
1 large green bell pepper
2 tablespoons minced garlic
1 tablespoon Italian seasoning
2 tablespoons oregano
2 jars of Mario Batali tomato marinara
1/2 cup grated Parmesan cheese
1 box of whole wheat spaghetti noodles
1 tablespoon of salt
1 tablespoon of black pepper

For noodles:
6 cups of water
2 teapoons of extra virgin olive oil
1 tablespoon kosher salt

Directions:

1. Brown ground turkey in a medium saucepan until fully cooked and drain any grease.

2. Dice onions and green pepper into small cubes and add to browned turkey

3. Add remaining ingredients into the skillet containing the turkey, onions, and peppers

4. Let simmer for 45 minutes, stirring frequently.

5. In a large boiler, add 6 cups of water, 1 tablespoon of kosher salt, and 2 teaspoons of olive oil. Bring to a boil and added spaghetti. Cook until the noodles are al dente (10 minutes).

Serve with fresh garden salad and onion rings as pictured above

As last year, I decided to spend the July 4th holiday at my mother's house. Mainly because I did not have time to prepare a dinner, as I was traveling to Colorado the next day. Anyway, the holiday was great! We had loads of great foods - especially BBQ! My mother's quite a master on the grill! ;)

This Memorial Day we did something a little different. Instead of doing a cook out like loads of Americans do on that holiday, we decided to do kabobs in the oven. They were just as good, or perhaps, even better than BBQ on the grill. And the good thing about it was that clean up was easier! ;) For desert, I made a strawberry shortcake cream scones. Talk about YUMMMY! :)

I came across this movie while I was browsing Netflix one night because I was bored out of my mind. This movie starts a bit slow with two friends from UK on holiday in the French countryside, riding their bicylces and doing a little bit of sightseeing. About 15 minutes into the film, the plot starts to develop, with a "stalker" guy watching the two girls and seemingly following them on his motorbike. Eventually, the two friends have an argument and one gets angry and leaves the other behind. It is not until she is told by a local French woman that the road they are traveling on is dangerous and that someone was murdered on it a few months early, that she starts to have second thoughts about leaving her friend. However, when she returns to the place she left her, it's already to late; her friend has been kidnapped, which sets the stage for the real nightmare to begin, as this lonely and afraid traveler learns that she must trust NO ONE and that everyone she meets in this French country is suspicious. Will she find her friend or will she end up just like her?

I am a complete cookie and sugar monster. However, I'm trying to lose some weight, which means that I have to cut sugar and cookies out of my diet substantially, so could you imagine how excited I was when I found these new, healthy Kashi cookies!! The good thing about these is that you can eat as many as you like and not feel EXTREMLEY guilty for doing so. :) Another plus about these cookies is that they come in a variety of favors. So far, my favorite two are chocolate chip and and oatmeal raisin/cranberry. YUMMMY!!! These cookies are definitely an A++++!

Hello all! I hope all is going great. I have been enjoying this spring weather so much! I think I have spring fever, too! :) I love being outside now; the weather's just been perfect! There's nothing new with me, just working and attending school as usual. It's nearly time for my finals to start so I'll be studying and writing over the next two weeks, but I won't let it get to me though and stress out about it. I've decided to take 2 courses in the summer, that way, I can graduate in December! Today I was fortunate to visit a Catholic service with a co-worker who's Catholic. I am considering converting over to Catholicism. I really enjoyed the service and the traditional sacraments that Catholics do. It was very cool. I am planning on visiting again! Maybe I'll find what I'm looking for spiritually. :) Well, that's enough for now. I better get ready for work tomorrow. ...Cant believe it's already time for Monday again *screams*!!!!! :) WISH YOU ALL A HAPPY EASTER!!!!

Chicken Milanese

Ingredients
Sauce & pasta: ½ cup butter, unsalted
4 garlic cloves, minced (or 1 Tbsp)
1 cup white wine
1/4 cup all-purpose flour
1 cup chicken broth
1 cup heavy cream
1 cup Parmesan cheese, grated
¼ tsp black pepper, to taste
½ tsp salt 8 cherry tomatoes, halved
¼ cup spinach, chopped
8 roasted garlic cloves, minced (or 4 Tbsp)
1 20-oz package tortelloni or tortellini, cooked according to package directions
Chicken:
4 boneless, skinless chicken breasts
½ cup flour
3 large eggs
¼ cup milk
1 cup Panko breadcrumbs
½ cup Parmesan cheese, grated
3 tsp fresh parsley, chopped
1 1/2 tsp Italian seasoning
1 Tbsp garlic, chopped
¼ tsp black pepper
4 Tbsp Colavita Extra-Virgin Olive Oil
4 lemon wedges
Procedures:
1.FLATTEN chicken breasts between 2 sheets of plastic wrap by pounding gently until chicken is approximately ½” thick.
2.WHISK eggs and milk together in a flat-bottom bowl.
3.MIX breadcrumbs, cheese, fresh parsley, Italian seasoning, garlic and pepper. Transfer to a flat plate.
4.DREDGE chicken in flour, coating both sides. Dip chicken pieces in egg mixture, coating both sides. Dredge in breadcrumb mixture, coating completely on both sides. Set aside.
5.MELT butter in sauce pan over medium heat.
6.ADD minced garlic and sauté for 1 minute. Add flour and stir well until well-blended.
7.ADD white wine, chicken broth, heavy cream and cheese. Bring to a boil. Reduce heat and simmer until mixture starts to thicken.
8.ADD roasted garlic, pepper and salt. Stir until well blended.
9.ADD tomatoes and spinach to sauce and allow to simmer over low heat for about 5 minutes, stirring frequently.
10.HEAT olive oil in frying pan over medium-high heat. Add breaded chicken to pan and cook until both sides are golden brown and internal temperature reaches 165ºF.
11.ADD cooked, drained tortelloni pasta to sauce and blend well.
12.TRANSFER chicken to a large platter and serve with hot, creamy tortelloni.
13.GARNISH with fresh parsley and lemon wedges.

Day Trip to Stone Mountain Park

During this spring break, my sister and I decided to take a local day trip to Stone Mountain Park. Being history and paranormal buffs, we were only interested in visiting the Antebellum Plantation Homes and Farmyard at the park, which are said to be extremely haunted. My favorite paranormal investigators, TAPS, recently visited the park and reported hauntings in the slave quarter shacks and in the Thornton home (the oldest house in Georgia). For more information about their investigation, feel free to check out this video which aired on SYFY (Ghost Hunters) a few weeks ago, and is the ultimate reason why we were motivated to visit the planation homes: http://www.megavideo.com/?v=PSGLZQ50 Although I didn't catch any apparitions, I really found the grounds around the planation park to be very lovely, and the historical information I found on each home was very interesting. :) That said, if you're looking for an easy day trip and you're in Georgia, I suggest checking out Stone Mountain. There are loads of other attractions there that are equally as cool as the Antebellum Plantation Homes and Farmyard--it just happens to be my favorite though! :) Enjoy my pictures!

I am a huge fan of this period piece series about a wealthy British family, the Granthams. I have been watching it endlessly! It comes on PBS and recently, Netflix has streamed season one! This series is very interesting, as it tells the story of the happenings inside Downton Abbey, an extraordinary English Manor house. If you love period pieces, I totally recommend that you watch it! There's always something interesting happening at Downton. :)

I have not written in this blog in ages. I haven't had the time. I've been swamped with school work! This is my last year of grad school and I am so looking forward to December (graduation time). :) I've been looking for an internship position, as it is mandatory that I intern at a college or university during my program. I've contacted quite a few schools - Agnes Scott, Emory Unviersity, and Georgia Tech. So far, I feel like Emory or Agnes Scott will accept me as their intern in the office of Study Abroad. It would be great to intern in an office and help students who want to travel overseas to study! :) Who knows, maybe I'll even get to travel somewhere.

Other than that, I haven't been up to much. It's been so cold here recently. A few weeks ago, we got stranded in the ice storm. We were not able to get out for 1 week. I did enjoy my days off work, but then I started to get bored. :) I never thought I'd say that! I'd watched as many Netflix movies as my little eyes could handle. Hahahaha. To be honest, I wish it would snow again. Now I'm regretting taking it for granted. Hahahaha :)

Well, that's news from me. I'll keep you all posted on my internship postion and keep your fingers crossed!

What has she gotten herself into, a single, Canadian social worker asks herself. Lillith seems to be a bright and loveable little girl who is being abused by her parents for no apparent reason at all. She tells her social worker that her parents want to kill her and that they told her that they were going to send her to Hell. When the social worker hears this, she immediately response by taking the child out of her parents' home. Unfortunately, she cannot find anywhere for Lillith to go, all of the foster homes are packed and little Lillith cries when she's made to stay in a state home. The Social worker takes here home and that's when all Hell breaks loose.... Lillith is not the little angel she's cracked up to be. :) What a treat! Zellwegger does an excellent job as the social worker in this one! A MUST SEE!

What would you do if you woke up and found that you were one of the last people on earth and that those who were left were blood sucking zombies? You'd be shocked, right? Well, that's exactly what Jim, a young londoner who has awaken from a coma, is--SHOCKED! With the help of 2 other survivors, Jim tries to save himself from the lurking dangers of the infected civilians of his country. ....I know this movie is slightly old, but oddly, I'm just now recently seeing it. :) If you're into realistic, non-silly zombie movies (I am) then this is the perfect movie for you. It's very exciting and the acting is tolerable. :)

Strawberry and Blueberry Napoleons w/ Homemade Devonshire Cream

Devonshire Cream Recipe:

1 package of cream cheese
2 cups of cool whip
4 teaspoons of Splenda / sugar
1 teaspoon of vanilla extract

Directions:

In a large bowl, combine whole package of cream cheese, cool whip, splenda, and vanilla. Mix with electric handmixer until smooth. Set to the side.

Napolean Recipe:

1 box of Pepperidge Farm Pastry sheets
1 cup of fresh sliced strawberries
1 cup of fresh whole blue berries
2 cups of your favorite jam (strawberry)

Directions:

Bake pastry sheets until puffed and golden. Let cool for 10 minutes before slicing half. Spread jam and devonshire cream on first half (bottom) puff pastry piece - there should be 6 halves of pastry pieces. Top with strawberries and a blueberries. Continue this method until 3 pastries pieces are layered together. When each (2) Napolean is built let them sit room temperature into ready to eat.

*Option: for more sweetness, feel free to sprinkle fresh berries with a little Splenda or sugar.

Serve with coffee or your favorite tea!

(Fish, shrimp, french fries, & cold slaw)

Ingredients:

2 tilapia fillets
1 cup of King Arthur Flour
2 tablespoon seasoned salt
3/4 cup vegetable oil

Directions:

Pour flour in a small bowl. Wash fish in hot water and dry. Lay fish flat on cutting board or plate and sprinkle both sides with seasoned salt. Batter fish in flour and set aside. In a skillet, pour in vegetable oil and let it get hot. When hot, carefully place fish fillets in skillet and fry for 5 minutes on both sides until golden brown. Place on a plate on top of paper towels to drain. Serve hot with malt vinegar and tartar sauce.

I was blessed by my mother on Christmas with this SUPERB animated film that I haven't seen in ages. "When the Wind Blows" is a sad story of war. After watching this movie, I was heart-broken.

Jim and Hilda Bloggs are the typical retired couple in rural England. They drink endless cups of tea and have an unwavering faith in the wisdom of their government. However, that is before their lives are devastated by nuclear war. This film is based on the novel by Raymond Briggs, and features original music by David Bowie.

The Skeptic

Though a low-budget, independent film, "The Skeptic" is a fascinating ghost story, and now, one of my favorite films. Following the death of his aunt, Bryan Beckett inherits the family mansion which is, from his first night there, haunted. However, Beckett, being a skeptic dismisses all thoughts of a haunting, and always offers an excuse as to what may have caused the weird occurrences in the house. Odd things continue to happen in the mansion and Beckett learns that he can no longer offer any explanations. Soon, with the help of Cassie (the lovely Zoe Saldana), Beckett uncovers a horrible secret about his family, one that he, himself, has buried deep inside himself.

This film is a classic ghost story. Those of you expecting to see a blood/gore film will not be interested in this one. However, those you who like "intelligent," well-crafted ghost stories will appreciate the beauty, and storyline of this film.

The Ghost of Greville Lodge

This British ghost story is about and orphan teen, James, who discovers that he has a wealthy, great uncle. The uncle invites James to his house (Greville Lodge) for the 2 week Christmas holiday. It is at Greville Lodge that James tries to unlock the mysteries of the ancient residence after having had strange dreams and seen ghosts with his own eyes. The house has a lot of painful memories that the uncle and the housekeeper, Sarah, want to forget, but cannot. This film is based on a novel by Nicholas Wilde, and was featured as one of England's Christmas season ghost stories on BBC in 2000. I found this film suspenseful and the night scenes are very spooky! It's worth a watch!

Les Yuex Sans Visage or The Eyes Without a Face

So I've always believed the stereotype that French cinema sucks. For some French films, especially the contemporary ones, this has been a correct generalization. ;) However, for this particular film, it's not. I was thoroughly impressed with the "Eyes Without a Face." This black and white, French language film will keep you on the edge of your seat.

A wealthy plastic surgeon is distraught when his beautiful daughter Christiane's face is ruined in a car accident. To restore her beauty, and to help relieve his grieving, the surgeon, with the help of his nurse, begins to kidnap young girls around Paris and remove their faces. He places their face on his daughter's. Many times, the surgeon is unsuccessful, as the faces begin to deteriorate and rot away.

I was absolutely in disbelief at how graphic this film was. It's hard to believe that something like it was made in 1959. It's a wonderful movie. The ending is great!

This Native American supernatural thriller has to be one of the best that I've seen this year! The storyline is brilliant and very suspenseful. When Shayla returns to the reservation to visit her family, she is haunted by visions of what she thinks happened to her missing brother. However, at the end of the movie, we learn that the visions that Shayla see are not at all related to her brother, but is a message of something that will test her strength and change her "white-washed" view of her people.

Belen Rueda has to be one of the best Spanish female actresses that I have ever watched. It's hard to believe that she is still such a new actress. This Spanish language film, I would say, has a plot that is reminiscent of the classic ghost story. It is an atmospheric, very sad film about a haunted house and a woman who struggles with reality. Though I don't like most of the films by Del Toro, I would have to say that he really did a great job with this one. The acting was superb and the plot was great! If you're looking for a haunted house film, I recommend this one to you!

Wow! It seems that I haven't written here in ages! It's been quite a long while. :) I've been doing great. I just got back from a one week holiday in Arizona--what a beautiful state! I have posted my photos in the third traveling section of this blog. :) I had a very relaxing time there. Arizona has to be one of the most beautiful places I hae ever visited in my life! I enjoyed everything!

Other than traveling, I haven't done too much more with my time--just working and school. I'm so happy about this changing weather. I'll have to put all my fall decorations up this weekend. :) Of course I'll taking pictures of the decor and posting them ASAP!!!

Well, that's all for today. I'll try to write sooner next time. :)

Echoes from the Macabre is another favorite book of mine written by Daphne Du Maurier. In this book, you'll find a collection of creepy, unsettling stories that may keep you up at night. ;) I'm sure everyone is familiar with "The Birds," which was made into a film by Alfred Hitchcock. My favorite stories in this book are: "The Apple Tree," "The Old Man,""Don't Look Now" (also a movie), and "The Blue Lenses."

I wrote my final paper in one of my classes on Jubilee because I LOVE it!It is a masterpiece! The book is the tale of a girl named Vyry who is a biracial slave growing up on a plantation in south Georgia. The setting is the Civil War south and the author, Margret Walker, describes in vivid detail, the horrible things that slaves had to endure. Vyry experiences harsh treatment throughout her life just because she is half black and considered by whites to be nothing at all. Though Vyry goes through challenging trials and tribulations, she never loses her pride nor the hope of one day being free.

The Mist in the Mirror, written by Susan Hill, is a ghost story reminiscent in plot and style to nineteenth-century English fiction. James Monmouth returns to England from several years travelling abroad, he is looking for a sense of who he is and a place he can call home. But the pull of the past and the strangeness of the present draw him into a terrifying mystery of a ghost and of horror.

Mark Twain is definitely my second favorite author, after of course, Du Maurier. In Puddn'head Wilson, Roxana, a light-skinned mixed-race slave, switches her baby with her white owner's baby. Her natural son, Tom Driscoll, grows up in a privileged household to become a criminal who finances his gambling debts by selling her to a slave trader and who later murders his putative uncle. Meanwhile, Roxy raises Valet de Chambre as a slave. David ("Pudd'nhead") Wilson, an eccentric lawyer, determines the true identities of Tom and Valet. As a result Roxy is exposed, Wilson is elected mayor, Tom is sold into slavery, and Valet, unfitted for his newly won freedom, becomes an illiterate, uncouth landholder.

This Victorian novel, Lady Audley's Secret, follows Robert Audley through his detective-like work in trying to uncover what happened to his friend George Talboys, and who his uncle's wife, Lucy Audley, really is. During his search, Robert has to deal with lies, deceit, and even an attempt to kill him. Although the novel's content of bigamy and attempted murder was considered fairly immoral at the time of publication, it was extremely successful. This novel is one of mystery and suspense; I'm still surprise that such a novel was written so long ago. I guess that goes to show how extraordinary Mary Elizabetha Braddon was as a writer, and how beyond her times she was.

OK. Everyone always thinks I'm completely mad when I say that Frankenstein is one of my favorite novels! :) To those people, I only say that they don't know what they are missing. This book is full of suspense and excitement! When I first started reading it, I was thinking that it would be some stupid/fake novel about a monster-like man, but I was wrong! I couldn't put this book down, and ended up reading it in 2 days! I think our perception of Frankenstein has been distort, as the media portrays it as a book about a slimy green monster all sutured up in threads. It's NOTHING like that at all. Frankenstein isn't even the name of the monster!
The plot of Frankenstein is one that is very captivating and moving (I was near tears at the end), and if you're looking for an adventurous novel, I advise you to check out this one ASAP!

Comes the Blind Fury was one of the first books that I ever read by Saul. It is a classic ghost story that kept me reading each page, even though I was terrified of what the next one might hold...

The Unloved is another one of my favorite books by Saul.

On a lush island off the South Carolina coast stands the Devereaux mansion, a once-great plantation house now crumbling. Here, Marguerite Devereaux has cast off her dreams to care for her aged, demanding mother. Now, for the first time in twenty years, Kevin Devereaux has returned home to visit his mother - hated, frightening Mother. Suddenly, horribly, Mother dies inside the locked nursery. All the secrets of this once-proud southern family emerge like tortured spirits from the sinister past to wrap their evil around the unsuspecting children.

The Heretic's Daughter is a novel by Kathleen Kent that tells the story of the Salem, MA witch trials. Sarah Carrier and her family are falsely accused of practicing witchcraft, publically shamed, and thrown into Salem jail. The story tells of the harsh treatment received by those who were wrongly convicted. It's a very heart-rendering story about the strength of one family who struggles for freedom in a time when those who stood up for their rights and freedoms were scorned by religious tyrants. I give this book an A+ for the story, the historic account, and the excellent writing by Kathleen Kent.

The Graveyard Book is an excellent read. My sister told me that one of her students was reading this book and that he said it was good. I decided to read it, not expecting much out of it, but I was pleasantly surprised after a few chapters. Neil Gaiman, author of Coraline is an excellent writer!

When he was a baby, Bod's family was murdered by Jack. Fortunately, Bod escapes murder and hides in the graveyard where he is taken in by ghosts who raise him as their own son. This book sounds silly, but it's full of suspense and imagination. Gaiman does an excellent job in bringing the characters alive. The book is worth a read and I'm sure you'll enjoy it as much as I did! I can't wait until the movie. :)

Irish Shepherd's Pie

Ingredients:

2 tablespoons butter

1 white onion

2 celery stalks, diced

2 carrots, diced

2 cloves minced garlic

1 teaspoon minced fresh rosemary

1 1/2 pounds ground turkey

1 tablespoon tamato paste

2 tablespoons Worchestershire sauce

1/2 cup beef stock or broth

2 cups green peas

1 batch of mashed potatoes

4 tablesoopns shredded Parmesan cheese

Directions:

Melt butter in a large saute pan over medium-high heat. Add diced onion, diced celery stalks, diced carrots and minced garlic. Saute until vegetables are softened somewhat, about 8-10 minutes. Stir in 1 teaspoon minced fresh rosemary, stir.

Brown turkey until fully cooked

Next, stir in tomato paste, Worchestershire sauce and beef broth. Stir again and them mix in the green peas.

When most of the liquid has cooked off, spoon the mixture into a casserole dish. Top with the prepared mashed potatoes and spread evenly. Garnish with grated Parmesan cheese.

Bake in preheated 375 F oven for approxmately 30 minutes, or until the potato topping looks golden brown.

I've had the pleasure of watching this amazing, action-packed vampire flick! I really enjoyed this movie, as it was taken from a different viewpoint--the vampires'. :) The audience was made to see the daily life of vampires and how they struggle to stay alive. I really like this plot as I found it unique. If you are looking for a decent vampire flick, taken from a different point-of-view. I recommend Daybreakers; it will not disappointed!

Happy BELATED birthday to me!

Hello! I hope everyone's great! I haven't had a chance to write in my diary, but I'm here now! So much has happened since I last wrote here. :) For one, I'm one year older than I was! That's right, August 3rd was my birthday! 29 years old! Almost 30! I feel so old, but in reality, I know that I'm still so young. There are so many things I want to achieve still. :) hehehehe I had the most loveliest of all birthdays. I got so many special gifts from my family and friends. :)

It's been great being out of school. No more hectic writing papers, reading, and things like that. But, unfortunately, I'll be heading back to class very soon. :( NOOO! Hehehehe

My sister and I have been trying to plan a trip to Boston, so, perhaps I'll have new pictures to update my travel section with. :)
